Cherry oat squares with chocolate drizzle

Flapjacks use up storecupboard spares and these chewy, oaty, fruity bars topped with chocolate will always go down a storm

Method

  1. Heat oven to 180C/160C fan/gas 4. Butter and line the base and sides of a 22cm square cake tin: cut 2 strips of baking parchment the width of the tin and longer than the base and sides, and fit into the tin each way and up the sides. This will make lifting it out easier.
  2. Mix together the flour, sugar and oats in a bowl. Add the egg, melted butter and cherries, and mix well. Tip into the tin and spread evenly with a fork.
  3. Bake for 20-25 mins until golden brown. Cool in the tin for 10 mins, then carefully lift out using the paper and place on a board. Mark, but don't cut, 4 lines each way to make 16 squares. Melt the chocolate in the microwave for 1 min, then drizzle over the squares. When the chocolate has set, cut the squares down the marked lines.

    Made this twice already really, really quick and easy. Good for the childrens lunch boxes and sold out at a cake sale. Great recipe for my 10 yr old daughter to make by herself. Added more cherries to second batch, as complaints from my family that some slices were cherry-less!

    Very nice and did not fall apart which flapjacks can do. Added less sugar and used some sour cherries as well. Would be nice using dried apricots

    Very easy to make and they taste good. I would probably add some more cherries next time and the recipe could easily be tweaked to add other fruits such as apricots or other ingredients like coconut.

    I made this recipe for my dad and his work friends. I put raisins and sultanas instead of cherries and added white chocolate as well as dark chocolate for the topping. Both work really well and from feedback they are a definate success. I would perhaps cook it for slightly longer next time but definately make it again.

    I made it to take as a snack but i can't eat cherries so i swapped them for 100g pecans and swapped the chocolate for maple syrup IT WAS AMAZING!!

    mine were really sweet and really sticky, crust on top but really gooey below. didnt add any chocolate because i think they're sweet enough. it doesnt look as pale as the picture and the cherries didnt stay whole but still delicious

    Lovely crunchy flapjack style biscuits. Crunchy on the top but soft in the middle and very easy to make. Instead, I used gluten free flower as mum can't have gluten and it tastes as if nothing had been changed! I would add some more cherries next time though, other why's a fantastic highly recommended biscuit. Freya (11 years)

  • 100g self-raising flour
  • 175g caster sugar
  • 175g porridge oats
  • 1 egg , beaten
  • 100g glacé cherries , halved
  • 50g dark chocolate
