Halloumi aubergine burgers with harissa relish

Method

  1. Add 1 tbsp of the oil to a pan and tip in the onions. Cook over a high heat for a few mins, then turn down the heat and cook until soft and golden - about 8 mins.
  2. Meanwhile, heat another tbsp of oil and fry the aubergine for a few mins on each side until tender. Set aside. In the remaining oil, fry the halloumi until golden.
  3. Tip the brown sugar, pepper and harissa into the onions. Cook for 1 min until the sugar has melted. While the relish is cooking, spread the rolls with houmous, laying halloumi and aubergine slices on top. Spoon the sticky, spicy relish over and serve.

    Cracking recipe. We're not vegetarians but who needs meat with a recipe like this? It's so... meaty!! Stuck to the recipe exactly and wouldn't change a thing. Will become a firm favourite in our house.

    Sooo sooo good. Big hit with non-vegetarians. The balance of flavors is just lovely. I didn't change anything, except I didn't have a roasted red pepper. Think it would have been even better with that, but was great as it was too. Will definitely be making this again, and will definitely make it at the next bbq, I figure just make the onion relish beforehand and everything else can go on the bbq. A nice, impressive option for those who don't want to eat meat. Love it.

    Most enjoyable meal. I didn't have any halloumi so used feta and a little chopped fresh mint as a substitute (without frying it). I never buy roasted peppers as I resent spending so much money on something you can do at home for a quarter of the price - flame a red pepper on the gas hob until charred and brush off the blackened skin. The relish has a very nice flavour. I was probably a bit too generous with the houmous but hey, we don't like to stint on these things! Will definitely use this recipe again.

    Brilliant mid week meal for veggies or non-veggies alike. Neither I nor my husband are vegetarian but we try to avoid too much meat in the week time and both loved these (even though my husband says he doen't like aubergine!). I'm making them again tonight with sme sweet potato wedges on the side.

    Absolutely delicious meal! I used pitta and instead of frying the halloumi I grilled it to try make it a bit healthier! I would suggest doubling the amounts for 4 people, this only served me and my boyfriend.

    Just made this and it was delicious! Definitely not enough for 4 people though, I made this using about half of everything and I ate all of it!

    Made for having a friend over for dinner, they were lovely! Didn't have ciabatta rolls so made do with white seeded and worked just as well. Will definitely make these again!

    Lovely - have made it several times now. I don't have harissa paste, so have been using sriracha sauce. It all goes really well together - houmous, halloumi, aubergine and relish. Unexpectedly delicious as there are so few ingredients!

    Great weeknight meal - quick to cook with plenty of flavours! It can be a bit tricky to cut the halloumi right though (depends on which brand it is), so we normally use twice as much halloumi as described. Sharing one packet between two people... Because we're greedy like that ;) Love the harissa flavour too, definitely worth buying if you haven't got it already. In terms of roasted peppers, we've tried both roasting our own and using store bought. (Lidl sells a cheap massive jar, if cost is an issue.)

    Very tasty and quite quick to prepare. I would have preferred 'something green' with my burger, so might add some salad leaves next time.
