Sausage & broccoli carbonara

A spin on the Italian classic using sausage meatballs, spaghetti and greens - on the table in half an hour

Method

  1. In a large pan, heat the oil and cook the sausageballs until golden, moving them around in the pan frequently. Meanwhile, mix together the eggs, cheese and some seasoning with a fork in a jug.
  2. Cook the pasta following pack instructions. Add the broccoli for the final 3 mins, then drain, reserving a cup of the cooking water.
  3. Add the garlic to the sausageballs and cook for a couple mins more, being careful the garlic doesn't brown. Remove the pan from the heat.
  4. Add the pasta and broccoli to the sausage pan. Toss everything together, then add the egg mixture. Stir the sauce through the pasta for 1-2 mins. The heat from the pan will cook the sauce - if it is too thick, use a little of the reserved cooking water to thin it. Divide between pasta bowls and serve with extra Parmesan, if you like.

    Made this the other night - make sure you add enough parmesan or is a bit flavourless :-( .... think a few fresh herbs or some chilli would perfect it..... Nat x

    My broccoli needed a little longer. I took the pans off the heat, but the instant I added the egg I made scrabbled egg :-/ . My egg-fried spaghetti didn't taste of much.

    This was surprisingly good. I only made it for 2 people though but still used 3 eggs and 50g of parmesan but cut down on the pasta. The egg did start to look a bit scrambled though.

    Good recipe. Kids love it. Have also tried swapping sausage for chicken and bacon which worked well. Haven,t had an issue with eggs scrambling.

    Made this tonight for two, and as suggested by Frantic Flapjack, I still used 3 eggs and 50g of Parmesan and halved the other ingredients. I chose to steam the broccoli rather than add it to the pasta and this worked well. I personally found it a little bland so added more black pepper, but my boyfriend thought it was fine, so I guess it's just personal preference. Overall, a tasty quick and easy meal which is a great take on a classic.

    Made it for the family last night who all said it was nice. I had a little taste but found it rather bland, but they all enjoyed it and would have it again. It was quick that is the main thing!!
