Ingredients

  • 600g jumbo king prawns
  • 4 lemongrass stems bruised

For the marinade

  • 1 large red chilli, seeded and finely chopped
  • 1 tbsp olive oil
  • 2 tsp Thai fish sauce or soy sauce
  • 2 fat garlic cloves, crushed
  • 2 tsp grated ginger
  • 1 tsp ground cumin

Method

Mix the marinade ingredients and add to the prawns. Leave for 5 mins. To cook on a barbecue: thread the prawns on metal skewers, place in the centre of the grill on the lemongrass and cook for 2-3 mins, turning once until opaque. Discard the lemongrass before eating.

These are my fail safe quick tea recipe! Made numerous times and also love them for a Thai surf and turf, usually with teriyaki beef or chicken satay.
I just fry mine off in the frying pan, but instead of chopping everything roughly, I put it all in my Magimix for a paste.

Did these for a BBQ last night, they were delicious! Very spicy! Will certainly do them again!

I tried this for a Valentine's starter. The flavour was good but I think I will try again in the summer on a BBQ as I don't think grilling had quite the same effect. Tasty though!
