Strawberry parfait with Vin Santo, mascarpone & biscotti

A deliciously creamy, Italian strawberry dessert

Method

  1. Place the biscotti biscuits in a plastic bag and crush them lightly with the end of a rolling pin, leaving them slightly chunky. Tip the crushed biscuits into a bowl, drizzle over the Vin Santo and give it a stir. In small bowl, use a fork to slightly mash half of the strawberries with the sugar.
  2. Whip the mascarpone in a medium bowl, then fold into the whipped cream. If the mixture appears too thick fold through a little milk. In a 1-litre glass bowl, spread half of the soaked biscotti. Top with half of the mashed strawberries and then half of the mascarpone mixture. Repeat until you have used up everything. Slice the remaining strawberries and scatter over the top. Refrigerate, then pack into a cooler as this dessert should be served chilled.

    This is a beautiful recipe with wonderful flavours. I used Chateau Haut-Bergeron and found some Biscotti biscuits at our local Italian shop though not the traditional ones and I might try amaretti biscuits next time. I would suggest using more strawberries, this is definitely one for the folder.

    I used arametti biscuits & lots more stawberries. It looks impressive. Took it to my work's bbq & it went down very well.

    I made this with a little more mascarpone and swopped the strawberries for mixed berries. This made it colourful. I also added a couple of drops of lemon extract to the cheese & cream mixture. Looked good and tasted yummy although rather sweet.

    I have made this loads of times, its so easy, I swop the fruit for seasonal or instant, e.g lovely made with jar of morello cherries and kirsch rather than vin santo, scrummy!

    This was a huge hit at a recent dinner party and incredibly easy to make. Used amarreti biscuits and 500g of strawberries. Small leftovers kept well in fridge for 2 days. Will def. do again and will try gigi90's idea above.
