Green beans & mushrooms with tangy soy dressing

Method

  1. Boil the beans in salted water for 5-7 mins, then drain and submerge in a bowl of iced water. Pat dry with a tea towel and tip into a bowl with the mushrooms and chives.
  2. Put the rest of the ingredients into a small jar and shake well. Pour over the beans and toss gently. Pack in a covered container and refrigerate.

    Amazing. I love cooked mushrooms so I heated them in butter for a few minutes, and used lime instead of lemon as I prefer lime - everything else I kept the same. The flavours in this recipe are very exciting, it's incredibly quick and simple, very healthy (maybe minus the butter I used!!). A must try!

    I have made this several times and everybody loves it!! I make it a lot for guests as it is so delicious and always get a favourable response.

    I have made this several times for picnics and barbecues and it is always very popular. It is especially nice to have alongside more starchy salads like potato and pasta salads - it is light but very tasty.
