Crushed potatoes with rocket & lemon

An ultra-easy way to present two side dishes in one.

Method

  1. Boil the potatoes in their skins for about 15 minutes until just tender. Drain well, return to the pan and crush roughly with a fork. Stir in the olive oil and lemon juice, and season with plenty of salt and freshly ground black pepper. Then stir in the rocket until just wilted.

    I love this recipe. It's easy to make.. what i love the most is that the remaining ingredients are added fresh once the potatoes are cooked.. Simplicity and taste!

    Maybe I squeezed too vigorously, but I found the juice of 2 lemons to be far too overpowering for this dish. I tried to remedy this with butter and seasoning but wasn't impressed, sorry :(
