Method

  1. Make the sauce by mixing together all the ingredients in a small bowl. Then set aside until ready to eat.
  2. Pat the steaks dry with kitchen paper. Mix together the olive oil, spices and a little salt, then rub or brush over both sides of meat. Heat a griddle pan or barbecue until hot and smoking. Cook the steaks for 3 mins each side for rare, 4 for medium and 5 for well done. Then remove to a board and leave to rest for a couple of mins. Slice the steaks on the diagonal into thin pieces and serve with the chimichurri sauce to spoon over.

Do you need coriander or can other herbs be substituted?

Loved this, great way to serve steak. I couldn't get hold of fresh thyme so used a little dried thyme. Really tasty!

Really simple to do, tastes great and makes a change from having pepper or bernaise sauce with steak. I used fresh herbs as stated in the recipe but was generous with the white wine vinegar to make sure there was a decent "twang". I served this with home made chunky chips and a big bowl of salad.

A winner in my house, a really lovely way to liven up steak. we just have it as it is with good bread and buttered green beans, leaves lots of room for cheese then!!!

Just double the sauce if lack of sauce is a problem ??
