Spiced carrot & lentil soup

A delicious, spicy soup, packed full of iron and low fat to boot. It's ready in under half an hour

Method

  1. Heat a large saucepan and dry-fry the cumin seeds and chilli flakes for 1 min, or until they start to jump around the pan and release their aromas. Scoop out about half of the seeds with a spoon and set aside. Add the oil, carrot, lentils, stock and milk to the pan and bring to the boil. Simmer for 15 mins until the lentils have swollen and softened.
  2. Whizz the soup with a stick blender or in a food processor until smooth (or leave it chunky if you prefer). Season to taste and finish with a dollop of yogurt and a sprinkling of the reserved toasted spices. Serve with warmed naan breads.
Try

Make it Moroccan

Substitute the chilli flakes and cumin seeds for a few teaspoons of harissa paste. You could add cooked shredded chicken at the end of cooking, too.

Make it dairy-free

For a richer but dairy-free alternative, use a can of reduced-fat coconut milk instead of the milk.

    it was delicious, we had a tin of lentils that we put in worked perfectly it was so quick and easy. Thought it would last us a couple of days but ate in one go!!! Definitely will make again

    this was yummy. i was a little bit nervous about serving lentil soup to my partner but i didn't need to worry - he loved it! served it with some warmed naan breads.

    Just fab, delicious. I keep making massive batches of it, freezing individual portions and then taking to work for lunch. Dead easy to make, must confess haven't grated the carrots once, just chopped them, blender took care of them no problem.

    I enjoyed this soup although next time i think i will add more chilli. The cumin flavour is delicious and got better the next day when i took it to work in a flask for lunch.

    I was looking for a carrot soup recipe as I had got 2 large packs of carrots on offer from the supermarket. It was lovely made loads and put in freezer to take to work for lunch. If its too thick just thin it down with stock or water its easy.

    a bit too thick so added more milk (used soya milk) although im sure this would not have greatly altered the consistency. Would definetly use more spice next time, served with rice and onion bahji it tastes great.. will definetly make again

  • 600g carrots , washed and coarsely grated (no need to peel)
  • 140g split red lentils
  • 1l hot vegetable stock (from a cube is fine)
  • 125ml milk
  • plain yogurt and naan bread, to serve
