Chargrilled calamari & red pepper salad with paprika mayo

Mediterranean-style squid on a bed of rocket with sweet red peppers and a smoky dipping sauce

Method

  1. Mix the garlic with the mayonnaise and paprika.
  2. Wash and pat dry the squid with paper towels and then cut into thick rings. Toss in 1 tbsp olive oil and season. Heat a griddle (chargrill) or frying pan until smoking hot. Add the squid and sear for 1-2 minutes on each side or until char marks appear.
  3. Toss the rocket, peppers and squid with a drizzle of oil, the vinegar and some seasoning. Serve with the paprika garlic mayo on the side.
