Chargrilled calamari & red pepper salad with paprika mayo
Mediterranean-style squid on a bed of rocket with sweet red peppers and a smoky dipping sauce

Ready in 20 mins
- Mix the garlic with the mayonnaise and paprika.
- Wash and pat dry the squid with paper towels and then cut into thick rings. Toss in 1 tbsp olive oil and season. Heat a griddle (chargrill) or frying pan until smoking hot. Add the squid and sear for 1-2 minutes on each side or until char marks appear.
- Toss the rocket, peppers and squid with a drizzle of oil, the vinegar and some seasoning. Serve with the paprika garlic mayo on the side.

- 3 roasted red peppers from a jar, drained and roughly chopped
- 1 tbsp white wine vinegar
