Italian chicken & basil burgers with tomato relish
A light cheeseburger with Mediterranean flavours of fresh tomato, creamy mozzarella and sweet basil

- Heat the vinegar, sugar and mustard seeds in a small saucepan, until the sugar dissolves. Bring to the boil and simmer for 1 minute, then leave to cool.
- Mix the mince, basil and egg yolk with lots of seasoning. Form into 4 burgers.
- Heat 1 tbsp oil in a frying pan and cook the burgers for 7 minutes on each side or until golden and cooked through.
- Stir the tomatoes and spring onions into the cider dressing. Serve the burgers in the buns topped with some torn mozzarella and the tomato relish.
