Italian chicken & basil burgers with tomato relish

A light cheeseburger with Mediterranean flavours of fresh tomato, creamy mozzarella and sweet basil

Method

  1. Heat the vinegar, sugar and mustard seeds in a small saucepan, until the sugar dissolves. Bring to the boil and simmer for 1 minute, then leave to cool.
  2. Mix the mince, basil and egg yolk with lots of seasoning. Form into 4 burgers.
  3. Heat 1 tbsp oil in a frying pan and cook the burgers for 7 minutes on each side or until golden and cooked through.
  4. Stir the tomatoes and spring onions into the cider dressing. Serve the burgers in the buns topped with some torn mozzarella and the tomato relish.

    Really easy to make and tasty. Relish sauce dried up in the pan but we re-heated and worked out fine. Would make again.

  • 2 tbsp cider vinegar
  • 1 tsp golden caster sugar
  • ½ tsp yellow mustard seeds
  • 500g lean chicken or turkey mince
  • a small bunch basil , torn
  • 1 egg yolk
  • olive oil
  • 2 tomatoes , chopped
  • 4 spring onions , sliced
  • 1 ball mozzarella , torn into pieces
  • 4 buns , toasted
