Shirred eggs with spinach & jalapeño
Shirred is the American name for baked eggs - these have a spicy hit of chilli to their creamy gratin base

- Heat the oven to 180C/fan 160C/gas 4 and put a baking sheet in. Divide the butter between 4 shallow dishes. Mix the spinach with the jalapeño pepper, paprika, celery salt (if using) and double cream. Season with pepper and salt (use less salt if you are using the celery salt). Divide this between the dishes. Put these in the oven on the baking sheet for 5 minutes.
- Break 2 eggs carefully into each dish and bake for 15-20 minutes or until the whites look opaque. Sprinkle the cheese over the top and put back in the oven for 2 minutes. Serve with toasted strips of tortilla for dipping.

- 2 slices jalapeño peppers , finely chopped
- a large pinch smoked paprika
- a large pinch celery salt (optional)
- 4 tbsp double cream
- 8 eggs
- 25g cheddar , grated
- 2 tortillas , toasted, cut into shards or strips
