Roast salmon with peas, potatoes & bacon

Method

  1. Heat oven to 220C/200C fan/gas 7. Tip the potatoes into a large shallow roasting tin and toss with 1 tsp olive oil and some seasoning. Roast for 20 mins until just starting to colour, then scatter over the lardons and return to the oven for 10 mins to crisp up.
  2. Remove the tin from the oven, push the potatoes and bacon to the sides and lay the salmon in the middle. Brush with remaining oil, season, then return to the oven and cook for 20 mins more until the salmon is just cooked through. Meanwhile, cook the peas in boiling water for 2 mins and drain.
  3. When the fish is cooked, lift it to a serving dish. Stir the peas and spring onions through the potatoes, drizzle with a splash of vinegar, stir through the mint and season to taste. Spoon around the salmon and serve.

    This was really delicious and was enjoyed by everyone. Easy to make with minimal washing up afterwards. I found that the initial cooking of the potatoes was too long at twenty minutes and I ended up having to cover them in foil when the salmon was cooking to stop them getting too brown. I added a handful of samphire with the peas and it was gorgeous and complemented the fish perfectly. Will definiteley make again!

    Made for a quick supper, the salmon was baked to perfection, the lardons gave a nice smoky flavouring, potatoes a little over cooked so will reduce cooking time next time as I WILL be making again

    Fantastic, quick and simple with minimal clear up. I'd mention the dish minus the salmon would make a great side to other foods as well. I'm cooking this for a second time as I write this! A firm favourite for when salmon is affordable.

    OMG I tried this last night and it was beautiful. I struggle to find fun things to do with fish but this dish is amazing. I would leave out the vinegar and spring onion next time (that is just my own taste though dont be put off) I CAnNOT wait to make this dish again. Very impressed!

    This was good and I would make it again. I think next time I would definitely reduce cooking time on the potatoes as they were a bit too brown. I didnt use Lardons I used smoked bacon instead. I think using the mint would be better, I didnt have any and felt that the dish was missing something. Wondering if spreading the samon with honey would work?

    This recipe was a superb dish, it is easy to prepare and cook, it did take about 40 mins but it was well worth the wait. Id defintly make it again because every thing about this was perfect. instead of white wine vinager i used white viniger with sugar which was the iceing on the cake well on the salmon, so thank you for putting it one it was delice.

    Really easy - am very impressed. High impact low effort cooking that is very tasty!! I added halved cherry tomatoes at the same time as the bacon and left out the spring onion - still very tasty! Clean plates all round and looks impressive when you serve it at the table.

    I made this for a dinner party for 6 people and it was positively awesome. Nothing left over for the dog. It didn't take anything like 45 mins to prepare - more like 5 mins and an all-in-one dish made clearing up easy. I added a little Maple Syrup to the salmon and gave it a little blast with the grill. I served it on a large plate with the potatoes and peas around the edge, a spring of mint on top. I shall certainly do again.

    Fab recipe. I used salmon fillets and reduced the cooking time to suit. I especially liked the vinegar, mint and spring onions in the peas (it reminded me of Yorkshire salad.

    This took no time to prepare, not sure where the 45 mins prep time comes from. Really lovely and fresh tasting, wasn't sure about the vinegar and mint but they add a lovely flavour. Like other comments I found the potatoes cooked too quickly and had to turn the oven down to 180. Would make again but with a lower oven temperature. Enjoyed by the whole family.
