Dorset apple traybake

Simple-to-whip-up apple cake that can be cut into bars or squares for a tea time treat

Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper. Peel, core and thinly slice the apples then squeeze the lemon juice over. Set to one side.
  2. Place the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar. 3 Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of tin and remove paper. Cut into bars or squares.

    I was looking for a quick cake to bake during a Sunday afternoon which would use up some apples, this was the perfect thing! It was easy and delicious, and will definately make again.

    Easy to make but took ages to cook, at least 20 mins longer to cook than the recipe stated. We ate ours cold like a cake and it was moist and tasty. Nice apple flavour. I can imagine the pear one mentioned above would be delicious too!

    so far this is my favourite way to store this season's apples; the freezer is full of these traybakes, which have seemed just as yummy once defroster. i'm hoping it's also a good way to use up the apples i've blanched and frozen ...

    tried this today but added a teaspon of mixed spice and teaspoon of cinnamon..its ABSOLUTELY GORGEOUS!!! one thing though, the mixture was a lot and spilled out of the tin and into the bottom of my oven, which im going to clean up now! Either use half the mix or use a bigger tin than the one stated. The cke is really crumbly and moist...YUMMY!!!

    OMG, what a beautiful recipe.. Made a mistake in putting almond extract in instead of vanilla, but what an excellent addition, along with cinnamon sprinkled over the apple. Definately a family favourite now.

    A great way to use up my apples from the garden. It was great with ice cream or custard. I did have FAR too much batter though so would perhaps use a bigger tin than suggested. My 3 and 5 yr old loved it.

    I have just made this and I can't believe how simple it is to make and how moist the sponge is! A real winner. 4 stars awarded as I think I will add some mixed spice or cinnamon next time, but as a first try, this is fab.

    Delicious cake and easy to make. I added some cinnammon to the mixture and sprinkled a little over the first layer of apples which has given a lovely added taste. Will make again.

    All I added to the recipe was a teaspoon of mixed spice. It was lovely and moist and so easy to make. I did mix the caster sugar and butter together first, then added the eggs and vanilla extract, before adding all the dry ingredients. The cake is delicious.

    Having taken note of some of the comments I replaced 100g of flour with ground almond and threw some cut up chunks of left over marzipan on the top and it was really delicious!

    Very easy to make and delicious to eat! I tried baking it in a silicone baking tray, without much success as it stuck to the tray a bit. Will use a traditional tin in future. Definitely will make this one again - took some into work and everyone wanted second helpings!

    Lovely recipe, came out perfect first time. I added a little milk to make a smoother mix and next time will try some cinnamon. Perfect with some good vanilla ice cream :-)

    Hmm this cake tasted nice BUT it certainly took alot longer then the time stated. For 2 reasons I think, firstly I dont think the cake tin is big enough; it needs to be alot deeper. And secondly, because the apples are so wet from the lemon jucie; which I think draws the water in the apples out. So therefore the cake needs longer cooking time. Will I try again?? probably not, I have far better apple cake recipes I can use.
