Simple-to-whip-up apple cake that can be cut into bars or squares for a tea time treat

Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper. Peel, core and thinly slice the apples then squeeze the lemon juice over. Set to one side.
  2. Place the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar. 3 Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of tin and remove paper. Cut into bars or squares.

    Wow, I can actually bake a cake. I am fairly new to baking, and it never ceaces to amaze me when it comes out right. This was wonderful, me and my 2 year old son made it, I was a bit worried that his enthusiastic mixing would make it heavy, but nope it was light, airy and very tasty. My baking tray may have been a bit to big, I was a bit worried as I couldn't quite cover all the apple completly on the top layer and due to this I used about 3/4's of the apple, but I need not to have worried, plenty of apple flavour and plenty of cake around it all. Thank you for this web site. Off to make the apple fruit cake now!

    Great recipe, very quick and easy. I made this for a Father's Day tea on Sunday and another one today because it all got eaten up really fast and everyone wanted more! I kept the recipe the same, apart from covering the chopped up apples in ground cinnamon before adding them to the cake which is really tasty.

    I made this last noght as a dessert. I am living in Brisbane and as it is winter is was a wonderful comfort food. A very quick,easy and successful dessert. I agree that it is not exciting but nevetheless very good. I also replaced the apples with pears which I covered in ginger cordial which gave the fruit and the cake a fantastic hint of ginger. I would do this again but peel the pears next time as the skins were not so good.

    I found this was far too sweet. I also found that by thinly slicing the apples, the middle layer disappeared into the surrounding sponge. Won't be making this again.

    Made this yesterday as i had guests. I live in Cyprus and couldn't find cooking apples so made mine with normal eating apples. Went down really well!! Really easy to make. The cake was really light. I also added some cinammon to the apples and served this hot with ice cream. Everyone loved it. A big sucess. Will definately make again!!

    I made this cake last night using small, tart apples from a tree in the garden. I found that the cake batter was a bit thick and fussy to work with but the end result was incredible! I added cinnamon and lots of sugar to combat the tartness and the end result was just heavenly. And it's even better the day after! I will definitely use this recipe again!

    This recipe is just FAB. Some of the luke warm reviews had put me off baking it. This was time wasted - my kids want me to cook this every week. Very easy to throw together - I used Olivio instead of butter because I didn't have time to let it soften. It tastes lovely - in a no nonsense apple pie sort of way - except instead of pastry there is lovely light and golden sponge. And it cut beautifully. I didn't bother with spices, simply because I was in too much of a rush. I didn't miss them at all. The apple (plain old Bramleys) tastes absolutely lovely.
