Dorset apple traybake

Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper. Peel, core and thinly slice the apples then squeeze the lemon juice over. Set to one side.
  2. Place the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar. 3 Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of tin and remove paper. Cut into bars or squares.

    I have never been particularly successful with traybakes. I used the baking oven of an Aga to cook this but substituted the butter with soya margarine. The results were fantastic. This will definitely become a family favourite and I have already passed this recipe onto three friends!

    Added mixed spice and cinnamon and less sugar which all seemed to work. Whole family loved it - managed to sneak some into the freezer first. Delicious and so easy.

    Made this according to instructions, although adding mixed spice. It went all over the sides of the tin and took much longer to cook through. Is the tin size correct? Tasted wonderful though, especially warm with cream.

    Really lovely cake that can be serve hot or cold, dessert or cake. so easy to make and looked great. I added cinnamon and it worked well with normal eating apples

    Had loads of pears but no apples so made it with pears, added a teaspoon of ginger and it went down a treat at work, had to cook it for much longer than suggested probably an extra 20 to 30 mins but will definitely make it again, the word used over and over again was "moist", lovely

    I have been wondering what to do with a tin of apples leftover from a christmas hamper given to me and decided to try this. What a hit! I used half brown sugar and half white sugar and served with homemade toffee sauce. YUM!!!

    I made this cake for the first time on Thursday, I live in Spain and cannot get Bramleys, so I used Granny Smiths. I needed to leave it in the oven a little longer than stated but this just could be my oven. It was a real winner, I run a guesthouse and we are having a special weekend and all the guests are on a full board basis. I cut the cake into squares and served it with afternoon tea really yummy
