Dorset apple traybake

Simple-to-whip-up apple cake that can be cut into bars or squares for a tea time treat

Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper. Peel, core and thinly slice the apples then squeeze the lemon juice over. Set to one side.
  2. Place the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar. 3 Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of tin and remove paper. Cut into bars or squares.

    Really easy to make, but a bit fiddly to put in the tin as the mixture is so thick. I needed to cook mine for 65 minutes in the fan oven, but it was really delicious and have now made it twice.

    Wow, I made this cake today, and it's just Perfection! :) Next time I'll add some vanilla ice-cream - I had none today :/ But my hubby loved it anyway :)

    The texture of this tray bake is wonderful, when looking at the batter i was worried it would be massively dense and stodgy but it came out buttery and light. however I added a teaspoon and a bit of cinnamon and a teaspoon of allspice to add extra flavour and it wasn't enough to make it really pop with fall flavours. Next time i am adding more vanilla and half a teaspoon more cinnamon and hoping for the best!

    Had a lot of golden delicious apples to use up from my back garden and came across this recipe. After reading reviews, I added a tsp of ground mixed spice and a tsp of ground cinnamin. This gave the cake a lovely flavour. I used half soft brown sugar and half golden castor sugar. I used less sugar as my apples were naturally sweeter than other tart/cooking apples. The cake took longer to cook then recipe stated but this could be due to my oven not being very good. Am unsure about the consistency of cake, as although the flavour was great, it was a bit moist. Perhaps too moist and undercooked?

    I also stirred the apples in with the mixture before putting in the tin. This was less fiddly then the layering method in recipe. Also meant that the apples were evenly distributed throughout cake.

    i added cennamon but forgot to add sugar on the surface . it was a nice cake but the taste of the apple was not traced at all . next time i will try with another fruit may be dates

    Made last night for a picnic today. It was really easy and quick to make and went down well at the picnic. A lovely light not too sweet cake. Will make it again as I think it will also make a good pus with custard.

    This is a good simple recipe for using up apples from the garden. I added some mixed spiced and layered the apples with cinnamon to make it more tasty. Would be very nice served warm with custard.

    Yum yum yum!! Used 2 duck eggs instead of hens eggs and regular caster sugar as that's all I had. Turned out beautifully soft, golden and juicy.

    Absolutely gorgeous and easy to make. I used a teaspoon of cinammon and 1 of mixed spice, didnt bother with the lemon, sliced the first layer of apple and chopped the second and sprinkled it over the top along with soft brown sugar.

    I'm amazed at people saying this cake is dull, surely they've used the wrong apples? I made it yesterday for the first time and it's stunning, everyone who's tried it says it's delicious, I'll be using this recipe regularly, really lovely cake and very easy to make.

    Mine is in the oven as we speak - apple cakes of any kind tend to be lovely, hence the four stars - however, I knocked off one star as it was a bit fiddly doing the layering as my apples kept getting dislodged!! Added spices by default as I thought it would be a bit plain otherwise.... can't have apple and no cinnamon!

    Love it! Very easy to make, i made two today the first one i did as it said but found it did sink slightly so with the second one i cut the apple into smaller bits and it worked a treat. i've had this with ice cream and its to die for!
