Dorset apple traybake

Simple-to-whip-up apple cake that can be cut into bars or squares for a tea time treat

Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper. Peel, core and thinly slice the apples then squeeze the lemon juice over. Set to one side.
  2. Place the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar. 3 Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of tin and remove paper. Cut into bars or squares.

    easy to make and really tasty - I added some cinnamon and mixed spice to mine which I think worked well. Next time I make it we're going to have it hot with custard as a pudding too as I think it would be great like that as well as cold. definitely recommend the recipe.

    This went down a treat. With a daughter who won't eat much fruit this was a great way of getting her to eat apples and enjoy them. I enjoyed it best warm with cream as a pudding. The kids like it warm with a bit of ice cream.

    Amazed that this is so highly rated. Its so bland it could be a USA recipe. It needs 2 tsp of mixed spice and 100g sultanas soaked in 1 tbs brandy. If you can't get any cooking apples more flavoursome than Bramley, use Braeburn. Zest the lemon before you juice it. Too much juice. Serve with sour cream.

    I made this for workmates, while I was off work sick, it went down very well - my mixer blew up tho', so I now mix ingredients gradually. Now made it six times, it is heaven and the whole family love it, one wants it for their wedding ..

    A good alternative to Eve's Pudding as it is lighter and cooks more evenly. The spices with the apples help to lift it. I used mixed spice and next time would probably add cinnamon as well.

    I live in the US and this cake looked so delicious i had to make it. I am not able to get the apples specified, i had to substitute it with Granny Smith. I was a bit sceptical, but the cake came together fast and is really good. Its simplicity lets the flavors of the ingredients come through. I just a piece with Vanilla IceCream. Besides a buttery and appley taste it also looks great and is cut into bars very easlily.
