Chicken biryani pilau

Method

  1. Heat oven to 200C/fan 180C/gas 6. Heat the oil in a large sauté pan and fry the chicken thighs, skin side down, for 8-10 mins until the skin is golden and crispy. Tip in the onion and continue to cook for 5 mins until the onion softens. Sprinkle in the curry powder and cook for a minute more, then stir in the rice and pour over the stock. Bring the stock to the boil.
  2. Cover the pan and bake for 30 mins until all the liquid has been absorbed and the rice is cooked. Stir in the peas and leave the rice to stand for a few moments before serving.

Stir in a small bag of roasted cashew nuts, flaked almonds or raisins just before serving.

    This is one of our regulars and it's always a winner - I've used chicken breasts instead of thighs and it's also very nice.

    Sitting here thinking about dinner and what to make that all three children will like tonight after school activities. Wanted something really tasty, easy and quick. Have made this before, kids loved it and even gave me time to do 30 mins of exercise while it was cooking in the oven. Great!

    This was so easy and absolutely delicious. I too added a handful of sultanas. The chicken thighs were so tender. Chicken breasts not as tasty and succulent. A favourite recipe now.

    Absolutly lovely! As everyone else said iits so easy to make and the best thing is all the ingrediants are most likely already in your cupboard! Can't wait to have the left overs for lunch tomorrow!!!

    It was very delicious n very easy to make. I added potatoes n used mixed vege instead of just peas. It taste n looks like it had 10 ingredients in it!

    This is a firm favourite in our house. Rather than using curry powder, I use 2tbsp cumin, 1 tbsp paprike and 1 tbsp chilli powder. Gives it a really delicious deep flavour without being too spicy.

    I used NiniB's suggestion of changing the spices slightly- I added cumin, paprika, and a bit of curry powder, which produced a lovely breadth of flavour. I fell down slightly in that I tried to make the recipe to serve one as opposed to 6 and my rice ended up a bit undercooked, but all in all it was very tasty!

    Contradiction: biryani and pilau are 2 different dishes. Unsure why this dish has got this title. Ingrediants are nothing like the authentic dish. Might taste nicew but its not the proper stuff I'm afraid.

  • 2 tbsp vegetable oil
  • 6 large chicken thighs , skin on
  • 1 large onion , finely sliced
  • 2 tbsp curry powder (hot if you like it spicy, mild for tamer curries)
  • 350g easy-cook, long grain rice
  • 700ml chicken or vegetable stock
  • 250g frozen peas
