Cod with bacon, lettuce & peas

Method

  1. Heat the sunflower oil in a medium non-stick frying pan. Add the bacon, shallot or onion, and garlic. Cook gently, stirring, for 2 mins, then push to one side of the pan.
  2. Season the cod with ground black pepper. Fry in the pan for 2 mins, then turn over. Add the peas and stock, and bring to a simmer. Cook over a medium heat for a further 2 mins, then add the lettuce and crème fraîche. Cook for a couple mins more, stirring the vegetables occasionally, until the fish is just cooked and the lettuce has wilted. Serve with bread to mop up the broth.

    Really quick and easy, great for mid week. Clean plates too from my 18 mth and 3 year old. Served with new potatoes.

    I don't usually like meals without bread, potatoes, etc. but this was the exception. I used pangasius fillet with only one head of lettuce, 100 gr of peas and some single cream that I had in the fridge. It was delicious, healthy and very quick. Will definately make it again.

    Really yummy dish and healthy at the same time. Was very quick to make and made an ideal mid-week dish. I left out the creme fraiche but I think perhaps you do need it to add that little bit of creamy-ness.

    I found the sauce far too runny and one lettuce would have been sufficient. If I made again, I would try using 100ml of stock.

    Yet another recipe where 'healthy' seems to be synonymous with 'bland'. Very dull dish. The only flavour came from the bacon. Will not be cooking again.

    Won't be making this again. It was passable but the thin insipid sauce didn't do it any favours. There are much better low fat dishes around.
