Sausage casserole with instant garlic bread

Method

  1. Heat the oil in a wide shallow pan and fry the sausages until browned. Push to one side, then tip in the onion, carrots and celery, and cook, with the lid on, for 10 mins until softened.
  2. Stir in the tomatoes, beans and their juice, stock cube and thyme. Add grated garlic, cover and simmer for 10 mins.
  3. Meanwhile, toast the ciabatta, then rub with the remaining garlic, drizzle with oil, scatter with a few thyme leaves and serve with the casserole.

    I wonder if it would be OK to use Kidney beans in this as my OH isnt keen on the Cannellini beans (Im OK with them) Its the juice im concerned mostly about as i don't think it would be possible to use the juice. Unless i just added a bit more stock or a splash of white wine maybe....

    A message for Jooles, Kidney beans are OK to use, tip them into a fine sieve or colander to rinse off the water/juice ( I run then under water from the tap) no, don't use the juice they are in... once rinsed, tip them into the casserole. Hope I've explain myself clearly... enjoy.

    Very simple and tasty. I found it filling even without the garlic bread. Ideal for one living alone as it is one pot cooking and enough over to freeze for another day. Will definitely be on the menu again.

    Tres Bon....quick, simple and bursting with flavour. Have some sauce leftover which will add some chorizo to make a hearty soup.

    I had some meatballs in the freezer and used them instead of the sausage. It was excellent, especially as the meatballs themselves had been a tad disappointing first time around. This cheered them up no end.
