Roll-your-own fajitas

It's always fun to assemble fajitas at the table, and it makes it easier for people to pick and choose ingredients depending on dietary requirements too

Method

  1. Mix the cumin, coriander and cayenne with some salt and pepper, then set aside. Heat half the oil in a frying pan, then throw in the onion, peppers and half the spice mix. Cook for about 3 mins. Tip the vegetables into a bowl.
  2. Place pan back on the heat with remaining oil, then fry the steak and remaining spice mix together for 4 mins until cooked through. Tip the steak into a separate bowl, garnishing with coriander. Heat the wraps. Bring everything to the table and let everyone help themselves.

    This recipe is good for minced beef, but if you're girlfriend (!) prefers chicken then just add a can of chopped tomatoes to the mix as it can be a bit dry. I like the way I don't need many fresh ingredients for this recipe and you can thrown in whatever veg you have lying around :) We also used mild a tsp of chili powder instead of cayenne pepper. Pretty cheap too....

    I cooked these with my daughter tonight and they were delicious. Quick and easy. Lots of clean plates with requests to cook it again.

    Used chicken, left out cayenne as we have a 4 year old and served with salsa so wasn't dry and gave it a little kick. Was delicious!!
