Authentic Italian 'grandma's biscuits' from Puglia made using lemon zest and olive oil - perfect with coffee

- Heat the oven to 160C/fan 140C/gas 3. Beat the eggs with sugar until light and fluffy. Add the oil and the milk and continue to beat, then slowly add the flour, lemon zest and vanilla. Add the baking powder and bicarb and beat again thoroughly.
- Put the mixture in a piping bag with a wide nozzle, and pipe onto a lightly oiled non-stick baking tray in 5cm batons. Leave a good amount of room between each biscuit.
- Dust with sugar and bake for 25 minutes until golden and cooked.

- ½ tsp lemon zest , finely grated
