Authentic Italian 'grandma's biscuits' from Puglia made using lemon zest and olive oil - perfect with coffee

Method

  1. Heat the oven to 160C/fan 140C/gas 3. Beat the eggs with sugar until light and fluffy. Add the oil and the milk and continue to beat, then slowly add the flour, lemon zest and vanilla. Add the baking powder and bicarb and beat again thoroughly.
  2. Put the mixture in a piping bag with a wide nozzle, and pipe onto a lightly oiled non-stick baking tray in 5cm batons. Leave a good amount of room between each biscuit.
  3. Dust with sugar and bake for 25 minutes until golden and cooked.

    What on earth is "OO" flour, who makes it and where do you buy it? Is it supposed to be self raising or plain for this recipe?

    Krystyna it's Italian flour, basically the same as plain flour, I have no idea where to get it from though I've only ever seen it in Italy...

    Krystyna, "00" flour is pastry flour. All purpose flour is "0". I know it's very confusing: I'm Italian and I used to live in England and while there I was always uncertain about which flour I was supposed to use for my italian recipes! :D

    Just made these, the mixture was a lot thicker than I thought it would be. Didn't use lemon zest and used powdered vanilla as I couldn't find any extract in my local supermarket and used 1tsp of baking powder they seem to have turned out yummy though :)
