Seared soy tuna steaks with spring onions & a ginger sweet potato mash

Glaze meaty fish with robust Asian flavours and serve with a colourful mash for a speedy midweek supper

Method

  1. Add the potatoes to a pan of boiling water and cook until tender. Drain then put back in the pot with a knob of butter and the ginger then mash until smooth. Keep warm.
  2. Heat a little oil in a wide pan and add the onions. Cook for about 5 minutes until softened. Move the onions to the edge of the pan and turn up the heat. Add the tuna and cook for 1 minute each side for rare, 2 for medium. Add the soy sauce to the pan and turn the tuna and onions to coat.
  3. Serve the tuna topped with the onions and the mash on the side.

    Soy sauce and tuna is a brilliant combination. Also good if you substitute the soy for teriyaki sauce.

    Really-really nice! I wish I had more onion though. 2 bunches of it next time! I was a bit careful with ginger. Will be much more generous with it next time as well!

    Very tasty except think soy sauce quantity is too much, very salty, will try again with maybe only half the soy quantity. Ginger with the sweet potato excellent

    This was really good. An excellent end result with very little effort. If I made this again, I would use 2 bunches of spring onions as they seem to shrink away when cooked but they taste lovely.

    Absolutely delicious!! This was a "splurge" menu for us (tuna is expensive!), but it was worth every penny. I used a bit less soy sauce, and really felt that it could almost be a recipe for four people. The combination of the sweet and savory in the sweet potato and the soy sauce is wonderful, and the tuna is decadent. I would definitely go with more onions next time, and might add the soy sauce to the pan when cooking the onions so that it reduces a bit.

    Staggered how easy and good this is. Followed the advice and doubled the spring onions. I served with griddled cherry tomatoes and spinach. I've now done twice and can happily report this works just as well with salmon (although obviously takes longer to cook) which is currently a third of the price of tuna at our local supermarket.
