Mini jacket potatoes

Bake up some new potatoes and top with soured cream and chives for a bite-sized, simple canapé

Method

  1. Heat oven to 190C/170C fan/gas 5. Prick the potatoes with a fork, rub with the oil, then toss with sea salt. Arrange on a baking sheet and bake for 1 hr. Let the potatoes cool for 10-15 mins, then cut a small cross in the top of each and pinch the bases to open a little. Add a teaspoon of soured cream to each, a little freshly ground black pepper, and a sprinkling of chives. Serve straightway.

    So simple but so delicious. A massive hit at my last party and I used sour cream dip. I'm making again for the Jubilee party.

    Very nice idea to include along with other nibbles! Everyone loved them, although I have to say they didn't look anywhere near as neat as those in the photograph! I added cheese and chives to the sour cream to give a bit more flavour.

    Agree with other comments - massive hit at my party, everyone loved them. Very easy to do, don't skimp on the sea salt as I think that was what gave them so much flavour. Great idea!
