Mini banoffee pies

Method

  1. Crumble the biscuits into a blender and blitz until you have fine crumbs. Add the melted butter and pulse again to combine.
  2. Spoon the mixture evenly between 8 individual fluted, loose-bottomed tart tins (9cm). Alternatively, make one big Banoffee pie, using a 20cm fluted, loose-bottomed tart tin. Press the mixture in firmly - you can use a teaspoon for this - and refrigerate for at least half an hour.
  3. Spread the caramel over the base of the tarts not quite to the edges. Arrange a layer of bananas on top of the caramel.
  4. Whip the cream until is has just reached soft peaks. Dollop onto the tarts to give a pillowy effect.
  5. Remove the tarts from the tins (see Tip). Poke one banana chip into the centre of each tart and scatter with chocolate shavings.

Make chocolate shavings using a block of chocolate and a potato peeler.

GETTING THE TART OUT

The easiest way to remove a tart from a loose-bottomed tin is to find a glass that is narrower than the hole in the base of the tin, place the tin on top of the downturned glass and allow the sides to drop down so the tart is simply resting on the base. Take it off the glass and use a thin metal fish slice to ease the base of the tart off and slide onto a plate.

    Really easy to make and incredibly tasty. They also look pretty show stopping too. My second attempt I opted for a slightly thicker sliced banana, really made the difference. Overall, pretty delicious. :-)

    Really easy and quick to make. Tasted delicious. As my son doesn't like banana's i made one with fresh strawberries and added chocolate and fudge chunks to decorate it. This was too as equally delicious and has now been named 'strawoffee pie' by my children. :)

    And old favourite that never fails to deliver. I could not find the tinned caramel and so I created it the old fashioned way by simmering a tin or condensed milk in boiling water for 1.5 hours. I noticed there was a warning on the tin saying do not boil due to risk of exploding.

    Was amazed at how easy this was... A must to do for a party! Takes very little time and went down a storm. My friend was amazed i hadn't actually "cooked" anything!!

    Loved doing this one quick to do for last minuet dinner guests it was quick and easy to do and the products easy to get hold of without going to the super market which makes it even better, it looked great and tasted deliouce

    Really easy to make though far too sweet for even my sweet tooth. So sweet, I couldn't even finsh mine. Think the problem was the Nestle Caramel, first time I'd ever used it and just too much, in my opinion. Or maybe, I'd put it on too thickly? I've had lots of banoffee pies and yes, they're sweet but usually delicious. Not sure I'd try again but if I did, I'd make my own caramel to my own taste.

    I made these pies and WOW! What a crowd-pleaser. Everybody loved them including myself, a very naughty delicious dessert. Great for dinner parties as was a real show-piece when the individual desserts appeared! 5 star!
