Spicy chorizo and egg brunch

olive reader Jo O'Neill shares her recipe for a hearty breakfast of creamy scrambled eggs and Spanish sausage

Method

  1. Fry the sausages and chorizo in a little oil. Drain the excess fat then add the paprika and cook for 30 seconds.
  2. Add tomatoes, cook for 5 minutes on a low/medium heat. Then add 150ml water, sugar and tomato purée. Simmer until the tomatoes have broken down a bit. Season.
  3. Softly scramble the eggs in another pan. Divide the sausages and eggs between 4 plates. Serve with buttered toast.

    Made this for breakfast this morning, Different twist on breakfast, and really tastefull, but personally don't think it needs the sugar, as the cherry toms are sweet enough. Quality pork sausages is a must too *****
