Bruschetta, goats cheese

Luxurious herbed soft goats cheese with mouth tingling South African piquante peppers, pickled in a sweet, snappy brine.

Ingredients

  • 1 small tiger baguette
  • Olive oil, Extra virgin
  • Peppadew piquante peppers (hot or mild, sliced
  • Soft goats cheese
  • 2 tbsp Fres chopped basil leaves
  • Freshly ground black pepper

Method

    1. Cut baguette into quarters and slice each in half horizontally or slice thinly, brush each with olive oil.
    2. Grill or griddle till golden.
    3. Top with the Peppers, basil leaves and cheese.
    4. Drizzle each with olive oil and sprinkle with freshly ground pepper.

I do the brushetta in the oven...190 for 10 mins...having drizzled with olive oil 1st...only one side..Goats cheese with peppers or mini chedder ones then put plum chutney on top..yum!
