  • 420g can butter beans, drained and rinsed
  • 500g cherry tomato, quartered
  • 2 small green or yellow courgette (about 300g/10oz in total), chopped into small dice

Method

  1. Tip all the ingredients into a bowl with some salt and pepper and mix well. Cover and leave at room temperature until ready to serve. This salad can happily be made the day before and chilled.

  2. On the day, bring the salad to room temperature and give it a good stir before serving.

I really liked this salad. I put a bit more cumin than suggested because I love cumin. I want to try with cucumber because I think that would be amazing too. Mum polished it off really quickly too.

I really like this recipe and I'm not a fan of zero meat. Next time I would probably use only half a red onion. Gonna chuck in some tuna fore my lunches next week.

I made this over the weekend and although I'm not a huge fan of raw tomatoes, it was stunning. Easy to make, super fresh and works a treat accompanied by a nice bit of fish.

This turned out well. Made it the day before and allowed it to marinade overnight. I too am not so keen on raw onion, but diced it very small and it definitely added to the flavours. Didn't have cumin, so added paprika to dressing.

Added tuna and this made a lovely wrap filling! I reckon it'd be tasty with some chopped olives and feta as a vege version, so will give that a go too. Not normally a fan of raw onion but I chopped it up small and the flavours were all very fresh and vibrant.

I agree with Miss_Micvicar I think adding the feta really makes the difference between being good and brilliant.

This is a really light and refreshing salad. I added finely chopped garlic, cucumber instead of courgette and added a can of tuna to the mix. Really pleased

So easy, healthy and tasty and better prepared in advance, what more can you wish for? Didn't have any courgettes so used cucumber. Friends thought it was amazing and different, felt a bit of a fraud as it was so simple and had been sitting in the fridge for a day!

Had 1/3 of the full recipe on it's own for my tea, delicious! Served anoth 1/3 with a chicken leg for my carnivore husband and had the last 1/3 as a packed lunch the next day. Will definitely make again.

Since it first appeared in the magazine this has become one of my staples. I swap butter beans for haricot or cannelini beans or chick peas depending on what I've got. Some people are suprised by the raw courgette but usually quickly sold on it. Salad is always popular and I too agree, it improves with a little time to marinate.
