Butter bean & tomato salad

This quick and easy vegan French salad combines delicious flavours - perfect summer dish

Method

  1. Tip all the ingredients into a bowl with some salt and pepper and mix well. Cover and leave at room temperature until ready to serve. This salad can happily be made the day before and chilled.
  2. On the day, bring the salad to room temperature and give it a good stir before serving.

    Agree with Quebec - tastes even better once left ot marinade. Have made a number of times and it's a great salad, often leave out the courgettes, find it tastes better without them.

    I can't comment on the taste of this myself as I don't like tomatoes so didn't eat any of it when I made it for a buffet recently, although I would say that it was very popular and others seem to really like it. I found it very easy to make and liked the addition of cumin in the dressing.

    Since it first appeared in the magazine this has become one of my staples. I swap butter beans for haricot or cannelini beans or chick peas depending on what I've got. Some people are suprised by the raw courgette but usually quickly sold on it. Salad is always popular and I too agree, it improves with a little time to marinate.

    Had 1/3 of the full recipe on it's own for my tea, delicious! Served anoth 1/3 with a chicken leg for my carnivore husband and had the last 1/3 as a packed lunch the next day. Will definitely make again.

    So easy, healthy and tasty and better prepared in advance, what more can you wish for? Didn't have any courgettes so used cucumber. Friends thought it was amazing and different, felt a bit of a fraud as it was so simple and had been sitting in the fridge for a day!

    This is a really light and refreshing salad. I added finely chopped garlic, cucumber instead of courgette and added a can of tuna to the mix. Really pleased
