Spiced swede fritters

The mild flavour of swede is a great vehicle for vibrant spices, so this twist on Indian vegetable pakoras really works

Method

  1. Cook the swede in a pan of boiling water for 15 mins until tender, then drain well. In a large bowl, mix together the flour, crème fraîche and egg to make a smooth, thick batter. Stir in the chilli, onion, spices and coriander, then season generously. Very roughly mash the swede and stir into the mixture.
  2. Heat a splash of the oil in a large non-stick pan and cook small, flattened spoonfuls of the mixture for 2 mins on each side until crisp and browned. Serve hot with chutney.

These are absolutely fabulous, I love swede but this is the best way you will ever eat it. These will definitely become a favourite in our household.

Very tasty but ended up a bit messy which is probably my cooking skills (or lack of) and not the recipe. Husband thought they were a bit claggy. Had with pork chops.

These were amazing! Very like bought veg pakora, but better as you can add spice to suit yourself. Next time I'm going to add a wee bit of other veg's too. Once all in mixed in my bowl I thought they weren't going to hold together, but once they started frying they were perfect.

Great for baby led weaning (easy on the chilli). Great versatile dish where you can vary the veg to suit what's in your fridge.

Great way to use up a tired-looking swede and get everyone wanting more! Didn't use creme fraiche but made the batter with soya milk instead so it was dairy free.

Use chickpea flour, it is used in Indian cookery for pakoras so would be more authentic, it is readily available in supermarkets called Gram flour or Besan flour among others.
