A German biscuit similar to gingerbread, lebkuchen is easy to make and a great Christmas treat

Method

  1. Tip the dry ingredients into a large bowl. Heat the honey and butter in a pan over a low heat until the butter melts, then pour into the flour mixture along with the lemon zest. Mix well until the dough is combined and fairly solid. Cover and leave to cool.
  2. Heat oven to 180C/fan160C/gas 4. Using your hands, roll dough into about 30 balls, each 3cm wide, then flatten each one slightly into a disk. Divide the biscuits between two baking trays lined with baking parchment, leaving room for them to expand. Bake for 15 mins, then cool on a wire rack.
  3. To ice the biscuits, mix together the icing sugar, egg white and 1-2 tbsp water to form a smooth, runny icing. Dip the top of each biscuit in the icing and spread with the back of a knife. Leave to dry out in a warm

    Not what I expected. Very tasty, but I wanted something that resembled the lebkuchen one buys. This was a denser more biscuity morsel. May be the way they were formed. I'll try making them twice as big.

    Very easy to make and tasted better than the bought ones. I would recommend making thin ones if you want something like the ones from the shop.

    I made these the other day they tasted fantastic, decided I am going to make as Chrsitmas presents for family. just a note for people using fan assisted ovens only bake for 12 minutes. yum.

    My daughter asked me to bake her gingerbread-man biscuits, so I have found this recipe. Fantastic taste and what a great fun to make it with your kid. Love it. Definitely will make again

    These biscuits are SO easy to make and were very tasty indeed - I didn't even put the icing on the top and my biscuits disappeared within 5 mintes of setting them down! I will defo make these again!
