Ingredients

  • 2 tbsp rapeseed oil
  • 1 onion, finely chopped
  • 1 stick celery, sliced
  • 1 leek, sliced
  • 1 medium potato, diced
  • 1 knob butter
  • 1l low salt or homemade chicken or vegetable stock
  • 1 head broccoli, roughly chopped
  • 140g Stilton, or other blue cheese, crumbled

Method

  1. Heat the rapeseed oil in a large saucepan and then add the onions. Cook on a medium heat until soft. Add a splash of water if the onions start to catch.
  2. Add the celery, leek, potato and a knob of butter. Stir until melted, then cover with a lid. Allow to sweat for 5 minutes. Remove the lid.
  3. Pour in the stock and add any chunky bits of broccoli stalk. Cook for 10 – 15 minutes until all the vegetables are soft.
  4. Add the rest of the broccoli and cook for a further 5 minutes. Carefully transfer to a blender and blitz until smooth. Stir in the stilton, allowing a few lumps to remain. Season with black pepper and serve.

Made this to use up some Stilton left from Christmas, absolutely lovely will definitely make again.did nt have a leek, put extra onion in instead.

Second time making this soup, I do really enjoy it though I would say it needs some good crusty bread to complement it. Maybe a little less than 1L stock is needed as already mentioned.
I will freeze a portion tonight, not sure how it will turn out!

Tried this once and have kept coming back! Tastes amazing.

I do it with half the recommended stock though as I think 1 litre makes it too watery.

Hey all. Has anyone frozen this soup? Looking to do lots of batch cooking over the next couple days to see us through January and as my family have unanimously agreed this is their new fave soup would like to know if its safe to freeze for busy work days? Cheers.

Absolutely fab as i'm allergic to onion i omitted the onion and leek but added extra celery and more cheese 210g divine

Absolutely scrummy! Like a previous post I also don't like to eat blue cheese but in this soup it tastes fantastic, so I would highly recommend giving it try before substituting another cheese.

Have eaten this soup before but never made it myself but glad I have as it was delicious ! Will definitely make this again as we both enjoyed it.
