Broccoli & stilton soup

A smooth blended vegetable soup with blue cheese that's as good for a comforting meal as it is for a dinner party starter

Method

  1. Heat the rapeseed oil in a large saucepan and then add the onions. Cook on a medium heat until soft. Add a splash of water if the onions start to catch.
  2. Add the celery, leek, potato and a knob of butter. Stir until melted, then cover with a lid. Allow to sweat for 5 minutes. Remove the lid.
  3. Pour in the stock and add any chunky bits of broccoli stalk. Cook for 10 - 15 minutes until all the vegetables are soft.
  4. Add the rest of the broccoli and cook for a further 5 minutes. Carefully transfer to a blender and blitz until smooth. Stir in the stilton, allowing a few lumps to remain. Season with black pepper and serve.

DINNER PARTY TIP

Reserve an uncooked broccoli floret, cut it into small pieces and blanch in boiling water for 1 minute. Also reserve a small handful of crumbled cheese. Serve the soup in bowls, then scatter with crumbled cheese and broccoli for a stylish garnish.

    Delicious! I made a double batch (inspired by finding a large chunk of leftover 'Christmas' stilton at the back of the fridge), and along with some homemade crusty brown bread it has kept the family going over the weekend. The perfect warming lunch for this cold spell.

    I made this last week - without the Stilton - and found it to be delicious. Broccoli is one of my favourite soups, and this is a good one. I had crusty bread with Gorgonzola alongside - no Stilton as we live in France.

    Used butter instead of oil. I have a Thermomix and made it in that. I completely blended the cheese in the soup and strained it after through a sieve to get rid of the stringy bits. Delicious!

    I added a little cream too, and didn't use leek as I didn't have any. Turned out gorgeous. Thick, creamy and just the right flavour. Didn't have to add any salt, just the perfect balance between vegetables and the stilton. Will definitely make again!

    Left out the celery and used an extra leek instead - turned out absolutely delicious - restaurant quality! My wife loved it even though she's not a stilton fan. Highly recommended.

    I have just made this soup using buttery,no celery, and strong danish blue as well as the other ingredients i did not substitute.I've made it for my son and his wife,i hope they enjoy it as much as i did because it was delicious.I had seeded panini bread with mine.I will definitely be making this again.

    Well, I can only describe this as The Canine's Gonads. I never had any celery and as you cannot buy a single stalk (what would I do with the rest of the bunch...), I used extra leek. I usually wouldn't go anywhere near Stilton cheese; It's that mould thing, puts me right off. However, I made this and it was absolutely delicious. Highly recommended.

    I made this soup for my friends for lunch and we all loved it. It was easy to make and perfect to eat on a cold day and over good catch up. Will be making this again (and again) :)

    Absolutely scrummy! Like a previous post I also don't like to eat blue cheese but in this soup it tastes fantastic, so I would highly recommend giving it try before substituting another cheese.

  • 2 tbsp rapeseed oil

  • 1 stick celery , sliced
  • 1 leek , sliced
