Meatballs in hot pepper sauce with orzo & rocket
Delicious and easy pork meatballs served with small pasta grains and a sweet red pepper sauce

- Mix the mince with the fennel and lemon zest and season. Form into 18 walnut-size balls. Heat a little oil in a pan and brown the meatballs. Remove from the pan and add the onion and cook until softened, then add the garlic and cook for 1 minute. Add the chopped tomatoes and a pinch of caster sugar and bring to a simmer. Add the meatballs back to the pan as well as the peppers and cook for 15 minutes.
- Cook the orzo following pack instructions. Drain and then mix with the lemon juice, 1 tbsp of olive oil, the rocket and seasoning. Serve the meatballs and pepper sauce with the orzo.

- 100g orzo pasta
- 2 handfuls rocket
