Meatballs in hot pepper sauce with orzo & rocket

Delicious and easy pork meatballs served with small pasta grains and a sweet red pepper sauce

Method

  1. Mix the mince with the fennel and lemon zest and season. Form into 18 walnut-size balls. Heat a little oil in a pan and brown the meatballs. Remove from the pan and add the onion and cook until softened, then add the garlic and cook for 1 minute. Add the chopped tomatoes and a pinch of caster sugar and bring to a simmer. Add the meatballs back to the pan as well as the peppers and cook for 15 minutes.
  2. Cook the orzo following pack instructions. Drain and then mix with the lemon juice, 1 tbsp of olive oil, the rocket and seasoning. Serve the meatballs and pepper sauce with the orzo.
