Jasmine tea-smoked chicken salad
Smoke chicken with light and fragrant jasmine tea then add to a salad of Asian flavours for a low-fat lunch

Low-fat
- Take a large piece of foil and fold up the edges to make a container. Mix the smoking ingredients together, put on the foil and rest in the bottom of the wok. Heat on high until the tea begins to smoke, then place the chicken on the rack inside the wok and put on the lid. Turn down the heat so that the mixture doesn't burn and leave the chicken to smoke for about 15 minutes or until cooked through. Allow to cool slightly, then shred with your fingers. Whisk dressing ingredients together and toss with the chicory, coriander and chicken.

- 75g Thai jasmine rice
- 50g brown sugar
- 25g good quality loose leaf jasmine tea
DRESSING
- 1 tsp palm sugar
- 60ml lime juice
- 20ml Thai fish sauce
SALAD
- 2 heads white chicory , thinly sliced
- 25g coriander leaves
