Mint chocolate pots

For an impressive pudding when entertaining, quickly whip up these individual creamy mousse cups

Method

  1. Melt the chocolate in a bowl over simmering water and stir occasionally until smooth. Stir in a few drops of peppermint extract.
  2. Gently heat the water and sugar until the sugar dissolves. Bring to the boil and let it boil for 1 minute, creating a light syrup.
  3. Whisk the egg yolk and add the syrup in a slow stream. Keep whisking until the mixture cools. Fold in the chocolate, then the cream. Spoon the mixture into 4 ramekins and put in the fridge until set.

    Delicious! Super easy to make. Very rich. Extra yummy topped with a bit of whipped cream. Served with shortbread as suggested, and my guest loved it. Will definitely make this over and over again. Wonder whether a variation with freshly squeezed orange juice instead of water in the syrup and finely grated orange rind might work?

    This recipe turned out very well. It really works with the shortbread too, which I would never have thought of! Will be making again soon. I made it do about 6 portions.

    I made this for last night's dinner and the family loved it. I prepared it in advance and it was very easy and stress free. It tasted amazing and everyone was impressed. The mint flavour was very subtle but really good. My husband was suggesting other flavours to add such as vanilla, hazelnut etc. I was thinking coffee or chilli might be a nice touch. I also served it with some home made shortbread and it went down a treat and looked very impressive. I served it with strawberries for presentation.
