Good-for-you green curry

This healthy Thai-inspired prawn pot is low fat but luxurious and ready in a flash - only 15 minutes

Method

  1. Put the ginger, garlic, onion, chillies and all of the spices in a food processor and whizz to a paste. Add a splash of water if you need to bring everything together.
  2. Heat 1 tbsp oil in a pan and fry the paste for 5 minutes until you can smell the garlic, ginger and spices. Add the stock and coconut milk and simmer for 10 minutes then add the herbs and prawns and simmer for a further 3 minutes until the prawns are pink and cooked through. Serve with steamed basmati rice.

    Nice flavours and the herbs worked really well but found it a touch thin as it was, so the second time added stir fried sugar snaps and baby chard to bulk it out and that felt more substantial.

    Made this yesterday with a few tweaks of my own due to lack of stock! It turned ou really well, such a nice and light curry!     Delicious! Replaced the prawns with 2 chicken thighs, and cooked the sauce for 20min to cook the thighs through. This probably is why I only ended up with enough sauce for 2 people - which is fine as there was only 2 of us eating!! I found it spicy enough for me, however hubby added his obligatory chilli flakes (but he does that on all the spicy things i make!) Will definitely make again.     Made this last night, it was delicious! Annoyingly, I forgot to add cardamon pods but there was still a great rich flavour. When I added the prawns and herbs I also added green beans (which I par boiled) and thin slices of courgette (fried in extra virgin olive oil) to bulk it up. I used rice noodles, which were a bit lost in the sauce, so next time I would accompany it with egg noodles.

    Loved it was easy to make and tasted great. Very proud as I didn't use paste. Agree with others wasn't enough for four, good thing I only made it for two. Thanks for the tip on the Basil as I can't bring myself to have Coriander-to many takeaway curries using the herb to "season" food!

    Just fantastic. I can't believe that something so easy to make can taste so marvellous!! The prawns I found rather expensive but that doesn't really matter as the recipe and the meal were unique.

    Such a great recipe! I added lime and used coconut oil to lubricate my wok prior cooking the spice mix...worked a treat and really emphasized the flavor. Definitely a new addition to my recipe book!

    After reading others' comments about portion size I upped the quantity of prawns to 600g but made the same amount of sauce. Delicious and fed 4 people served with rice. Will be making this again.

    Lovely! I left out the mint but added 100g fresh spinach at the end and that worked really well (although it was still on the wet side so I might reduce fluid next time). Served with brown and wild rice. Highly recommended.

    Perfect recipe. Quick to make, with intense flavour all the same. Can make it cheaper with chicken but Asda frozen raw king prawns weren't too expensive at all and were just the right amount for two. This makes a delicious mid-week meal but would also make an impressive meal for friends. Brilliant!

    Yummy! I did not whizz the ingredients in a food processor, but it still was delicious!!! More delicious than in a thai restaurant if you can believe it!

  • 3cm piece ginger , roughly chopped
