  • 200g smoked bacon, cut into small pieces
  • 125ml dry white wine
  • 142ml pot double cream
  • 350g raclette cheese, grated
  • ½ tsp smoked paprika


  1. Heat oven to 200C/fan 180C/gas 6. In a large pan, boil the potatoes for 5 mins, then drain and tip into a large mixing bowl.

  2. Melt the butter in a saucepan and gently fry the onion until soft. Add the bacon and cook for a further 5 mins. Mix the bacon and onion with the potatoes in the bowl.

  3. Stir in the wine, cream, most of the cheese and a little paprika. Season and mix together, then spread over a large (30cm long x 4cm deep) buttered baking dish. Sprinkle with the remaining cheese, cover with foil and cook for 25 mins. Remove the foil, sprinkle a little more paprika over the top and cook for a further 20 mins until the cheese is golden brown.

Really great! If you live in Australia and can't find the Raclette, Coles sells it in their loose cheese section in the deli.

Except the Swiss would have some macaroni in there too and serve it with some apple puree/compote on the side. Sounds gross, but don't knock it till you've tried it, it's an unusually good combination! And even better with some crispy/fried onions on top before serving.
MMmmm... "Älplermagrone", definitely my favourite for lunch while enjoying a day on the slopes.

This is indeed a lovely bake rich and hearty and very delicious. I tried reblochon cheese (yuk) tallegio (quite nice) gruyere (nicest).
As others have said I too was unable to source raclette cheese, luckily we all love it with gruyere. We have it with salad or plain green steamed veg.

I have made this recipe a few times. I do not eat meat so left this out but added extra onions. I also used extra mature cheddar cheese and only 250 grams as this is a recipe which is very full of calories! These alterations still make it a family favourite.

I couldn't get raclette cheese so used reblochon cheese instead, next time I make this I will try it with gruyere as I don't think I will ever eat reblochon cheese again. Nevertheless the dish is very good and I know it will be superb with gruyere

This is delicious!! My partner made it last night and i have to say i wasnt looking forward to it as it seemed to sound boring! But i loved it and we will definately make again!

Only thing is the sauce didnt thicken, maybe because we used gruyere?!? I dont kno but was still yummy!!!

this dish is just so delicious! I just add meat or fish for a complete meal, pork or lamb chop, sausages, steak, gammon. Also perfect with salmon, trout etc. Because the potatoes are keeping warm in the oven out of the way, it makes life so much easier to just concentrate on the hob, especially when cooking for guests. Goes without saying that a nice crisp salad is always a a welcome and colourful extra.

I made this with smoked cheddar, using milk instead of cream - delicious! Have also made mini ones in tart tins, but you need to do your potatoes on a mandolin, or hand cut into matchsticks. it's such a great recipe for playing about with, use whatever you have in the fridge - it'll probably work just fine. I love it!

Delicious. Didn't use the paprika but otherwise followed the recipe. I would say the wine probably does help to cut through the creamy richness so would always add it myself. Wll definitely make again. Well worth the calories!!

My daughter made this for us in Slovakia, and it was gorgeous. I love Raclette, very tasty, and found it over here in Waitrose.

Delicious warm comforting food. I used a mixture of raclette and ementaal cheese and it turned out gorgeous.
