Jaffa drizzle loaf

If you like Jaffa Cakes, you’ll love the moist, fruity cake. It will keep for a week, but it’s unlikely to last that long

Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter and line the base of a 1.2-litre loaf tin. Put all the cake ingredients into a bowl and beat with a hand whisk or wooden spoon for 3-5 mins, until light and fluffy. Spoon the mix into the tin and level the top.
  2. Bake for 40-50 mins, until golden brown and firm to the touch. Meanwhile, heat the orange juice and sugar gently in a small pan, stirring until dissolved. When the cake is cooked, remove it from the oven and spoon over the orange mix. Leave to cool in the tin, then remove and cool completely on a wire rack.
  3. Break up the chocolate and melt over a pan of simmering water or in the microwave on Medium for 1-2 mins. Drizzle over the cake and leave to set.

I never got chance to taste this cake as my husband took the two cakes that I made last night to work with him. i am assured by him and his colleagues that this cake is absolutely delicious and from them starting work at 7.00am this morning, they had eaten both cakes by 8.45am! They've also asked me to make two more! I made this cake in my food processor rather than messing about with a hand mixer and they both rose perfectly. Looks like I will be making this cake on a regular basis!!

I used a round 20" cake tin for this recipe and it worked fine. I also added lemon zest to the orange and also a 'splash' of Cointreau to enhance orangy flavour. I did find the cake started to burn on the top after around 20 mins, but I couldn't taste it once I'd covered the top completely with melted dark chocolate which was very yummy! By the way, this cake tasted even better the next day, the orange flavour really came out (you have to hide cake so it doesn't get eaten before then!!).

I have made this once and immdeiately sent the recipe to friends - it will be a winner for adults and children alike. So easy to prepare and the chocolate drizzle on the top makes it look that extra bit special (and more importantly makes it taste like a jaffa cake!). Probably took a little longer to cook than the recipe stated, but I kept checking and the top didn't burn or overcook.

Very pleased with the outcome, instead of a drizzle of chocolate it got coated - the whole family loved it :)

Made this a couple of days ago - it all went within minutes! Instead of drizzling chocolate over the cake, I put a whole packet of dark chocolate chips into the cake batter - it was delicious! Really easy to make, will definitely make it again - at school next week for my GCSE's!

Hi all, Have just finished our dessert of jaffa drizzle cake(recipe suggested a loaf tin didnt have one so used a sandwich tin instead)to accompany the cake we made bitter chocolate icecream, the icecream and cake partnered each other superbly. :)

Really lovely tasting sponge with a nice fragrant, orange taste. Will add more orange next time but really enjoyed this. My chocolate wouldn't 'drizzle' so I pasted it instead, and sprinkled over some sugared orange bits, looks good :)

I love this cake!! I found that it rose so much in the loaf tin that it deflated and wrinkled a little when I took it out. Now I use a deep, round tin instead and the cake comes out perfectly, tasting even more moist.

I haven't personally made this cake but have tasted one that someone else made from this recipe and it was bloomin' lovely! He agreed that it was easy to make, so I looked up the recipe without further ado. I look forward to making it as soon as I have an excuse!
