Method

  1. Heat oven to 180C/fan 160C/gas 4. Butter and line the base of a 1.2-litre loaf tin. Put all the cake ingredients into a bowl and beat with a hand whisk or wooden spoon for 3-5 mins, until light and fluffy. Spoon the mix into the tin and level the top.
  2. Bake for 40-50 mins, until golden brown and firm to the touch. Meanwhile, heat the orange juice and sugar gently in a small pan, stirring until dissolved. When the cake is cooked, remove it from the oven and spoon over the orange mix. Leave to cool in the tin, then remove and cool completely on a wire rack.
  3. Break up the chocolate and melt over a pan of simmering water or in the microwave on Medium for 1-2 mins. Drizzle over the cake and leave to set.

    I've made this a few times now - both as a loaf and as cupcakes. Both worked really well and it never lasts very long as quickly devoured.

    Yummy cake! I made it following the recipe, and think I'd add some juice to the mix or more zest as it wasn't quite orangy enough for me. Also the first time I made it I used a 1lb cake tin by mistake. You definitly need a 21lb!

    I've tried this recipe as a loaf, a round cake and this weekend tries cupcakes - I have to say the latter were my favourite! The ingredients provided enough for 12 cupcakes and as with previous attempts I zested 2 oranges instead of one. I filled each cupcake to 2/3 then added half a teaspoon of orange marmalade before covering with more cake mixture. They took around 45 mins to bake (as above) and once cooled I melted 100g dark chocolate and topped each cake - hey presto they were home-made Jaffa cakes! The marmalade fell out of the bottom of a few but they were absolutely delicious and have kept very moist. Will definitely make these again!

    Really good recipe, my tin was on the larger side, next time I will put in the zest of three oranges just for the extra zing. I am tempted to try the Orange Marmalade in the middle or perhaps even towards the top, finishing it with a chocolate ganache. This is a lovely recipe and liked by all!
