  • 4 tbsp crème fraîche

Method

  1. Bring a large saucepan of water to the boil. Add the potatoes and boil for about 15 mins or until tender. Transfer to a colander and drain well, then return to the pan and set over a very low heat for 2 mins to dry completely.

  2. Heat the milk and butter in a small pan, then pour over the potatoes. Remove pan from the heat, then mash potatoes using an electric hand whisk or potato masher. Tip in the créme fraîche and beat with a wooden spoon until smooth and creamy. Season with pepper and a pinch of salt.

Should come with a warning...Mash will never be the same! Simply awesome. I added a bit of single cream to the mix. Won't be going back to 'normal' mash anytime soon :)

This really is wonderful mash! Used with my potato ricer, it makes the most wonderfully silky and decadent mash. Love that it's on the healthier side.

Amazing mash! May have put a tad too much milk in than suggested, as tried to make for 4 instead of 6 - but it was just as yummy. Used reduced fat creme fraiche too.

Will be making this every time we have mash!

For a special treat try adding cream cheese too - yum!! (reduced fat stuff is just as nice and more guilt-free if you're counting the calories!!)

I consider myself an expert when it comes to mashed potato but have never bothered to had hot milk before. It really makes a difference and resulted in a light, lump free yet creamy texture. Will definitely follow this method again

Healthy mash recipe!!! no don't scroll down this is really tasty !! (you'll forget the 'healthy' when you try it). Supplement one large potato per person with one peeled and quartered turnip. You wont need any butter or marg as the turnip is more watery than the potato, so when you mash it, the mash is a lovely consistency. Also, ..... a feather on you cap ... your having another veg instead of fat. Really tasty .... gonna have it at the weekend! Season as normal.
