Peach Melba trifle

Method

  1. Put the amarettis into a glass bowl and pour over the orange juice. Slice the peaches or nectarines and save a few good slices. Add the rest to the bowl and mix lightly. Drizzle over a little raspberry coulis, followed by the custard.
  2. Whip the cream until it just holds its shape then spoon over the trifle. Top with the reserved peach slices and drizzle with a little more raspberry coulis. Chill for up to 2 hours, until ready to serve.

You can use other fruits for this, including sliced plums, strawberries, blueberries and mixed frozen summer fruits

    Loved this! Used far more raspberries though as we have loads in the freezer and no orange because I forgot to buy one! Still tasted great though!

    Loved the flavour of this but found it was a little sloppy, although I put in more amarettis than stated. Perhaps it was me but there also seemed too much orange juice for the amount of biscuit. Despite these comments it still got well and truly eaten. I will try it again and modify it slightly, as it was easy to make and still looked great.

  • 225g jar raspberry coulis or sauce
  • 500g carton vanilla custard
  • 284ml carton double cream
