  • 85g diced butter
  • 350g self-raising flour
  • ¼ tsp salt
  • 1½ tsp bicarbonate of soda
  • 4 tbsp caster sugar
  • 200ml milk, warmed to room temperature, plus a splash extra
  • crushed sugar cubes, to decorate

Method

  1. Heat oven to 200C/180C fan/gas 6. Whizz butter into flour. Tip into a bowl and stir in salt with bicarbonate of soda and sugar. Using a cutlery knife, quickly stir in milk – don’t over-mix.
  2. Tip out onto a lightly floured surface and turn over a couple of times to very gently bring together with your hands. Gently pat to about 1in thick, then stamp out rounds with a floured cutter. Pat together trimmings to stamp out more. Brush the tops with a splash more milk, then scatter with crushed sugar cubes. Bake on a baking sheet for 10-12 mins until risen and golden.

These tasted much too much of bicarbonate to me. Left an alkaline aftertaste. Sugar on top was nice though - I used Swedish pearl crunchy sugar.

i had an excellent result with this easy recipe. they were delicious. Will they still turn out good if I add raisins or blueberries next time?...just to create some variations. Any more ideas about what I could add please?

Ooops I failed, this was my first attempt at making scones and they hardly rose :-( Not sure what I did wrong, I'm thinking perhaps I made them too thin....I will try again though

This is the first batch of scones that have been 100% success for me. Over the years I have tried, tried and better tried various recipes only to be disappointed with their look & texture. THANK YOU. Yummy, especially with home made strawberry jam.

I made this today but was pretty skeptical about the success. I also added a bit of cinnamon and vanilla sugar. When it was done I tought the flavour was a bit too flowery. But that was just because I've never eaten scones and I had to get used to the flavour. I think these would be great with some dry cranberries. And next time I'm going to add more cinnamon. It is a quick, simple recipe with a delicious and good smelling result.

I first made these a few weeks ago, but doubled the recipe to make more than the stated number of scones - they came out lovely and lasted only a day.

I made them again tonight as a quick treat for a friend and they were just as beautiful, but this time I added some mix spice which worked amazingly. This is definitely a recipe I want to know off by heart.
