Creamy pesto & chicken pasta salad

Method

  1. Cook the pasta following pack instructions. Meanwhile, mix the red pepper with the cherry tomatoes and chicken. Mix the pesto and crème fraîche. Drain the pasta, then stir it through. Toss through the veg and chicken and eat immediately, or pack into a container for lunch.

    This is a quick solution for lunchbox. Instead of basil from a jar I mashed some fresh basil with olive oil and pecorino romano, before stirring in crème fraîche. Green or kalamata olives are good addition, and don't forget to season with salt and freshly ground pepper
