Baked skinny fries

A simple side dish of homemade chips isn't always unhealthy - this version coats the potatoes in spices too

Method

  1. Heat oven to 200C/180C fan/gas 6. Pour the oil onto a baking tray and put in the oven for 3 mins. Mix the cornmeal or polenta, paprika and garlic powder together and season. Toss the chips in the mix, then tip onto the tray. Shake well, then cook for 40 mins, shaking halfway through, until crisp and golden.

    Yum! Crispy crunchy and healthy, great recipie. I also tried crushed dried chillies for a bit of a kick, and used semolina instead of polenta which works just as well.

    Really tasty. By heating the oil nice and hot first they don't take long to cook at all and turn out nice and crispy just as they should be.

    Delicious. I make these all the time now, and sometimes mix n match with sweet potato. Used breadcrumbs as had no cornmeal or polenta - works well.
