  1. Heat the oil in a large non-stick frying pan. Add the leeks and 2 tbsp water, and cook for about 10 mins until very soft. Add the bacon, turn up the heat and fry until cooked.

  2. Meanwhile, cook the pasta following pack instructions. Drain and reserve a mug of the cooking water.

  3. Spoon cheese into the leek and bacon mix, adding some of the reserved cooking water. Season and stir gently over a low heat until melted. Toss through the cooked pasta, adding a little more cooking water, if needed, to help the sauce coat the pasta.

I agree about the salt - it's a little bit too much. Also this dried out quite a lot for me, so I ended up using a lot more of the cheese .... or maybe I just love cheese too much! I added in a bit more garlic too, because you can never have enough garlic.

I would agree with some of the comments on here that it's quite salty - although I was too lazy/in too much of a hurry to cut off the fat from the streaky bacon, so perhaps that played a part...
Nice though - and very speedy!

Bit salty using Boursin even when supplemented with lots of yoghurt to thin out the mixture and make it go a bit further - going to choose a different soft cheese next time but super easy quick and tasty recipe!

Simple and seasonal - just what I was looking for! Had a little parsley, basil and spinach left over so threw them in the mix too and it worked pretty well. The leftovers, along with 150g of boursin cheese - instead of the stated 100g - gave it a thicker texture (which I prefer) and using black pepper Boursin - instead of the garlic & herb - gave it a nice edge too. Will defo try with a clove of garlic next time.

Fab recipe! I wanted a slightly healthier version so I boiled the leeks with the pasta and grilled the bacon and used a low fat soft cheese. Still delicious (probably not as good as the fried version, it never is!)

Just cooked this for my very fussy 4yr old & he's loving it! I used roule instead of Boursin because it's half the price & it tastes lovely. Nice quick recipe for times when you don't want to spend ages in the kitchen. Definitely will be making this again :-)

i grilled the bacon first and made my own cheese sauce instead of using bousin , it was an absolute hit , all clean plates this is definately now a firm family favourite

Very quick and easy to make, is very tasty. I used the tip from one of the other reviewers and used Pilidelphia garlic and herb and it was lovely.

This is a really tasty comfort food for those chilly evenings.
I cooked the bacon under the grill to make it a little healthier. Leeks are one of my favourite vegetables, so I will definitely be making this again before the leek season is through!
